Learning about “New Nordic cuisine”

As a Chef and having recently moved to Sweden, I’m very interested in learning about the country’s food culture and how the food scene is over here, especially in the fine dining arena as that will be the area where I will be looking to get back into working in in a few months.

The term New Nordic cuisine is pioneered by René Redzepi and Claus Meyer, who run Noma Restaurant in Copenhagen which has been voted no.1 Restaurant in the world for the last 2 years . Noma has provided inspiration for Chefs worldwide, however there are many discovered and as yet undiscovered great Nordic Chefs who are equally as passionate to experiment, explore and develop this avenue of cooking and dining. I particularly like this style of cooking as it lends itself to a more healthy approach to fine dining than the classic French fine dining style and is very much based on environmental and sustainable foundations which seem to be the root of living in general in Nordic countries from what I have learnt so far.

I have found a good blog here about great Chefs in general and it has a good link to some Nordic Chefs that are doing some great food at the moment and have been for a few years.

I would be very grateful if any other keen food lovers out there stumble across any similar blogs or info on the Nordic cooking scene, especially in Sweden and could kindly send me a link or share a post or 2 with me 🙂
