Childhood favourites… Lemon and sugar pancakes :)

I had a serious blast of food nostalgia last night from my childhood..  +/ around 8 or 9 years of age I think it was when I first had these..

The nostalgia happened last night when my pregnant girlfriend had a craving for some food just before we were going to bed around 11pm so I whipped up a childhood classic of mine for her, lemon and sugar pancakes!

I think this was quite a general English classic for many kids growing up back home as I seem to remember (albeit very vaguely) a few friends at the time eating it at their homes too…

I made the pancake batter by eye but its basically as follows:-

  • 2 eggs
  • Approx 200ml milk
  • Approx 100g flour
  • Pinch salt

Method

  • Whisk eggs and milk together
  • Add flour and salt and mix until smooth
  • No need to rest the batter before cooking.. just cook, squeeze on lemon juice.. sprinkle with sugar..close eyes…eat.. enjoy!!
